Recipe: Pumpkin Muffins with Cream Cheese Filling

Saturday morning when I woke up to a full fledged snow storm, my first instinct was to bake. Everyone knows that the combination of snow outside and the smell of something baking in the oven is one of the world's little luxuries.

Not everyone knows that it's even more luxurious when half of the recipe is out of a box.

I had picked up this pumpkin bread & muffin mix and pumpkin pie spice from Trader Joe's on my last grocery trip in hopes of fully embracing fall.  To make the muffins, I followed the recipe on the box, but added a dollop of cream cheese in the middle of each muffin so that I could outweigh the fact that I just made muffins straight out of a box and add something special.  For the cream cheese filling, I just added a touch of pumpkin pie spice and a tiny bit of vanilla extract to regular cream cheese.

They were the best hot out of the oven!
