Recipe: Shortbread Cookies

I need a sweet after every. single. meal.  Whether it is super sweetened coffee after my breakfast, a piece of chocolate after my lunch, or a healthy serving of frozen yogurt after my dinner, I physically cannot stop eating until I've had my sweet. Sad, but true.

A few weeks ago my friend Sarah was over and I had no sweets in my apartment. I quickly looked up this recipe, which only requires 5 ingredients you probably always keep in your kitchen.  It was fun and they lasted me for days - serving as the perfect amount of sweet to end my meal (I won't lie, I even had one after breakfast)

Vanilla Extract

Beat butter gradually and add sugar, vanilla, flour, and salt until blended.  Roll the dough on a lightly floured surface until flat.  We used cookie cutters to make fun shapes, but you could always just cut the mixture into squares with a knife.  Place cookies on an ungreased baking sheet and bake at 275 degrees for 50 minutes or until the bottoms begin to brown.  Let them cool, and enjoy!
