Recipe: Shiritaki Noodle Chicken Stir Fry

I generally try to eat relatively healthy.  That's not to say that I don't understand the glory of the Whopper....Or McDonald's french fries. Don't even get me started on those.  Is it bad for you? Yes. Is it extremely satisfying? Absolutely.

Sometimes when I am walking home from the gym at 8PM and I haven't eaten since noon, I think about all the things I could just grab from the restaurants I am passing.  A huge sandwich from Lansky's, some sushi from Fusha, a huge burger from Big Nick's, noodles from Ollies, the list goes on and on.  On days like that, some lettuce and grilled chicken just isn't going to cut it.


I'm sure you are aware of my obsession with shirataki noodles by now (see: this recipe and this recipe). I like to always keep a pack on hand for days when I am feeling like a ravenous beast.  Last night called for the emergency supply.


Directions:
  • Drain and THOROUGHLY rinse half a pack of shirataki noodles and set aside to dry
  • Defrost some frozen stir fry vegetables (I get mine at Trader Joe's)
  • Dice and season some chicken and cook 3/4 of the way through in a pan with some vegetable oil and garlic.
  • I added some fresh mushrooms
  • Add the vegetables (defrosted and fresh) to the pan with the chicken
  • Add shirataki noodles
  • Add some soy sauce and Soy Vay and continue to cook
  • I always keep some ginger on hand and add it in, but it's just something I like
  • I also add a splash of hot sauce because I like my mouth to be on fire at all times
  • Secret Tip:  If you like a thicker sauce, add a little flour to thicken the soy sauce / Soy Vay
