Recipe: Roasted Vegetables

I don't know if I was starving last night or if these vegetables were actually amazing.  Such a low maintenance dinner. All you need is a knife! I don't have much to say besides - do it!

I basically followed this recipe using what vegetables I had, but I didn't have rosemary on hand so I left it out. 

your choice of cubed vegetables (I used sweet potato, cauliflower, zucchini, red onion, red pepper, and potatoes)
1 tablespoon chopped fresh thyme
1/4 cup olive oil
2 tablespoons balsamic vinegar
salt and freshly ground black pepper 

1. Preheat oven to 475 degrees
2. Cube all vegetables nad mix in a large bowl
3. In a separate bowl, mix olive oil, balsamic vinegar, fresh thyme, and salt and pepper.
4. Pour dressing over vegetables in bowl and mix so it is spread evenly
5. put on a pan and cook for 30-40 minutes
